Here is a tasty and simple recipe for a versatile walnut pesto:
For 4 servings
- 80g walnuts
- 60g basil leaves
- 4 tbsp olive oil
- 50g grated parmesan or pecorino
- 2 garlic cloves
- Juice of ½ lemon
Method
- Add all the ingredients (except the cheese) into a food processor, and pulse until well combined
- Add in the cheese and season to your liking
- Pulse again for a few more seconds, then store in an airtight container until ready to be used
